Barbeque Chicken Recipe – Sweet Thyme Chicken Breasts
This is a tasty and easy barbeque chicken recipe for skinless boneless chicken breasts. It has a sweet flavor to it, and can be eaten alone, sliced on top of a salad or served as a grilled sandwich on sourdough rolls with all the fixings.
This is another barbeque chicken recipe that I like to grill on a plank, it really gives it a unique flavor. You can grill it directly on the grill if need be, but I would reccommend using the indirect method if you go this route. Be certain not to overcook this one, as the chicken breasts will come out dry if you do.
Ingredients:
4 Boneless Skinless Chicken Breasts
4 TBSP Brown Sugar
1 tsp Salt
2 tsp Seasoning Salt
1 tsp Garlic Powder
1 tsp Onion Salt
1 1/2 tsp Fresh Chopped Thyme
1/3 Cup Garlic Olive Oil (substitute olive oil with chopped garlic or garlic powder if need be)

Grilling Plank
Soak your plank for at least an hour, longer is better.
Combine the brown sugar, salt, seasoning salt, garlic powder, Thyme and onion salt in a bowl and mix. Put the chicken breasts in a large ziploc bag and pour the mixture into the bag. Save the bowl. Mix the garlic olive oil with a pinch of salt and pepper in the bowl, cover and refrigerate.
Coat the chicken breasts with the mixture and let sit for 1-4 hours. Do not marinate overnight.
Set the grill up to barbeque using the direct method if using a plank, indirect method if not. Prep the plank by warming each side for about 3 minutes.
Place the chicken on the plank and cover the barbeque. The chicken should cook for about 35 minutes, keep a good eye on it, you do not want the chicken overcooked. Turn the chicken every 5-10 minutes.
Brush the garlic olive oil mixture on the chicken breasts the last two times you turn them. Make sure the chicken is done before eating, but not overdone so as to avoid dry chicken.
