Grilling Steak Techniques

There’s nothing better than a perfectly grilled steak, and we’ll show you how to obtain that perfection. When following our grilling steak techniques it is important to keep in mind that certain cuts of steaks should be prepared more carefully in order to ensure the best results. Each cut of meat is a bit different, but the technique is similar to them all. Sear, then finish cooking more slowly with a lower heat.

Keep in mind when using the slow cook grilling steak techniques that there is always the chance that the meat will dry out as a result of the hot air. To prevent this, many people will use what is called a “wet mop” technique. There are many different wet mops that you can use with such grilling steak techniques, including a combination of apple juice and tomatoes. The goal of this technique is to provide the steak with some flavor, prevent it from drying out and ensure that it does not burn.

There are also several other tips that should be kept in mind when grilling your steak to perfection. First, you should sear the meat at a high heat directly on the hot grates, regardless of whether you intend to slow cook the meat. Second, if you are slow cooking your steak, reduce the heat of the grill. You can do this with a charcoal grill by placing the lid on top of the grill, or by planning ahead and creating a hot zone and a cool zone through the placement of your charcoal.

If you find that your meat is drying out when slow cooking it, you might consider placing the meat on a tray. This will help to reduce the drying effect that the hot air can sometimes have on steak. To make sure that the moisture and juices do not cook out of the meat, it is critical to make sure that you finish off the meat using an indirect heat. Direct heat is great for searing the meat, but should not be used to finish it off. You want to make sure that the meat remains moist, too much hot air will do the opposite. Use the above mentioned grilling steak techniques and you will soon have a perfectly grilled steak.

Homemade BBQ Sauce Recipe

Here’s a great homemade BBQ sauce recipe that is great on meat, ribs and burgers.  This homemade BBQ sauce recipe is sweet, with a little spice to it.  Nice and thick with a robust flavor, a great way to start the BBQ season off!

Homemade BBQ Sauce Recipe:

Ingredients:

1 Shallot
4 Cloves of garlic
1 TBS olive oil
Fresh ground pepper
15 Oz tomato sauce
12 oz tomato paste
2/3 cup apple cider vinegar
1/2 cup packed dark brown sugar
2 TBL molasses
4 TBL Worchestire
3 TBL Montreal Steak Seasoning
1/2 TBL crushed red pepper
2 TBL liquid smoke
2 cups water

Saute the shallot, garlic, pepper and oil for about 5 minutes.  Add the remaining ingredients and bring to a boil.  Boil Cook at a slow boil for 5 minutes, then reduce heat to low and simmer, stirring frequently, for 20 minutes.

Let cool, bottle and refrigerate overnight before using.

BBQ Ribs – BBQ Ribs Recipe

BBQ ribs could be the best part of barbecue season, but do you know the proper method of grilling ribs? Well, you’re in luck, we have some great tips that will have you successfully grilling bbq baby back ribs, beef ribs or pork spare ribs in no time!

Making great barbequed ribs does not need to be hard. There are truly only a few tips that you need to bear in mind when grilling ribs in order to get the best results.

Start by using a roasting pan to form a bed of onions and whatever fruit you prefer. Many people like to use oranges or other citrus fruit to provide a sweet flavor to the ribs. The next step in this ribs recipe is to prepare your pork rib rub. Salt, pepper and a touch of chili powder works well.  I find using fresh ground pepper and sea salt gives the best results. You will then use this mixture to coat the ribs. Be sure that the ribs are completely and evenly coated on both sides. Next, place the ribs on the bed of fruit and onions. Now, pour two cups of orange juice over the ribs, cover the roasting pan with foil and put the whole thing on the grill.

With this bbq ribs recipe, you will be grilling the ribs using the indirect method. The ribs will be grilled for approximately an hour or so or until they are tender enough that you can pull the meat with a fork. At this point, the ribs may be removed from the grill and phase two of our bbq ribs recipe kicks in.

The next step in grilling bbq baby back ribs is to increase the heat on the grill to medium and place the ribs directly on the grill rack. You will then cover the ribs and barbeque the ribs for about ten minutes, turning once. Heavily coat the ribs with barbecue sauce and then cook the ribs for another five minutes or so. Check the ribs to be certain, as it could take up to ten minutes or longer for the ribs to be completely finished. Once the bbq ribs are done, they are ready to serve immediately.

Using this technique for grilling BBQ ribs will provide you with ribs that are tender and delicious as well as moist. Keep in mind that you can use any type of fruit that you prefer using this method, including apples.  You can also mix any spices that fit your taste, so get creative, grilling season is around the corner!

Grilling Tips for Shrimp

Grilled shrimp are great on the bbq, as long as you know how to prepare them properly. There are several grilling tips for shrimp that you can follow in order to make sure that your shrimp are properly grilled.

The first and most important of our grilling tips for shrimp is to make sure that you choose the right size shrimp. One of the biggest mistakes that many people make when grilling shrimp is to try to grill shrimp that are too small. Using small shrimp is a sure way to add headache to your grilling, they are difficult to work with on a grill, and simply don’t work. Instead, make sure you choose large sized shrimp, the larger the better. Not only will they be easier to handle, but they will look much better than a bunch of small grilled shrimp!

The second of our grilling tips for shrimp that you should follow is to make sure that you either use a grilling basket or a skewer. This makes it easier to handle the shrimp while you are cooking them. It is only a matter of personal preference as to whether you go with the basket or a skewer.
 
Another mistake that is commonly made is overcooking your shrimp. Shrimp cook very quickly so you will need to watch them carefully. Overcooked shrimp will become very tough and flavorless. The result will be shrimp that are not nearly as tasty as they could be when prepared properly, so be sure to keep a close eye on your shrimp and avoid overcooking them.

There are many additional grilling tips for shrimp that you can use to add flavor to your shrimp, depending upon your taste. Some grilling tips for shrimp call for brushing olive oil on the shrimp before cooking. If you want the taste of the shrimp to shine through this is an excellent recipe to use.

You could also add some seasoning, depending on what flavor you are looking for. Many grilling tips for shrimp include seasonings such as lemon juice, garlic, salt, pepper, basil, parsley, etc. You might also consider experimenting with some of your favorite herbs and seasonings as well to create a unique taste.  We really like garlic butter shrimp, when grilled properly, they are amazing!

Chicken BBQ Sauce

 

Try our chicken BBQ sauce next time you grill chicken.  This chicken BBQ sauce is easy to make, and should take less than 20 minutes from start to finish.

Since chicken is one of the main staples of many grilling and BBQ enthusiasts, it is wonderful to have a great homemade BBQ sauce that can really enhance your flavor.  This is one of our favorites!

Chicken BBQ Sauce

What you need:

2 cups apple cider vinegar
4 ounces tomato paste
1 tablespoon sugar
2 tablespoons peanut oil 
1 tablespoon steak sauce (We use A-1)
1 tablespoon Worcestershire sauce
1 tablespoon lemon pepper
Salt to taste
Combine ingredients in a sauce pan and let simmer for 10 – 20 minutes. Marinate chicken in half of the sauce overnight. Use the other half to baste the chicken while barbecuing.  You may also want to set aside a small amount for dipping.
