Barbeque Chicken Recipe – Lemon Pepper Chicken

This is a great barbeque chicken recipe. It is simple to BBQ, and takes no time at all to prepare. Although it may sound basic, it tastes incredible and is well worth your time to sample this BBQ chicken recipe.

I like to grill this barbeque chicken recipe using the indirect method. The chicken should cook for 45 – 55 minutes, and grilling it indirect will help to keep it juicy. Additionally, this barbeque chicken recipe calls for bone in chicken breasts. That is important, do not use the boneless skinless chicken breasts as it will not turn out properly!

Ingredients:

4 bone in chicken breasts
Lemon Pepper
Spray bottle
Apple juice
Apple cider vinegar

Rinse and pat dry the chicken breasts. Place them in a large ziploc freezer bag and add a generous amount of lemon pepper. You should add enough to cover the chicken completely, but not so much that there is loose lemon pepper in the bag, you want it all on the chicken. Let the chicken sit for 1-4 hours.

In the spray bottle, make a mixture of apple juice and apple cider vinegar that has a 50-50 proportion (so half juice, half vinegar).

Grill the chicken using the indirect method, turning every 10 minutes. Every time you turn the chicken, spray it with the vinegar mixture. Be generous with the spray, more is better!

The last time you turn the chicken, season both sides with lemon pepper to taste.

This is a great sweet marinade and is excellent on ribs and chicken. It can also be used for most other meats. The most important ingredient is the coke, you have to use regular coke (or cherry coke), not diet. It is the sugar in the coke that gives this marinade the ability to caramelize the food.

Coke Marinade:

1 1/2 cups coke or cherry coke
2 TBSP olive oil
2 TBSP worcestershire sauce
2 TBSP ketchup
1 garlic clove crushed
1 TBSP prepared mild mustard
Salt and pepper to taste

Combine all ingredients together and pour over the meat. Marinate for up to 4 hours. You can also score the meat with a sharp knife to allow the marinade to penetrate. A tasty and sweet coke marinade, certainly one of my favorites!

Barbeque Chicken Recipe – Sweet Thyme Chicken Breasts

This is a tasty and easy barbeque chicken recipe for skinless boneless chicken breasts. It has a sweet flavor to it, and can be eaten alone, sliced on top of a salad or served as a grilled sandwich on sourdough rolls with all the fixings.

This is another barbeque chicken recipe that I like to grill on a plank, it really gives it a unique flavor. You can grill it directly on the grill if need be, but I would reccommend using the indirect method if you go this route. Be certain not to overcook this one, as the chicken breasts will come out dry if you do.

Ingredients:

4 Boneless Skinless Chicken Breasts
4 TBSP Brown Sugar
1 tsp Salt
2 tsp Seasoning Salt
1 tsp Garlic Powder
1 tsp Onion Salt
1 1/2 tsp Fresh Chopped Thyme
1/3 Cup Garlic Olive Oil (substitute olive oil with chopped garlic or garlic powder if need be)
Pepper
Grilling Plank

Soak your plank for at least an hour, longer is better.

Combine the brown sugar, salt, seasoning salt, garlic powder, Thyme and onion salt in a bowl and mix. Put the chicken breasts in a large ziploc bag and pour the mixture into the bag. Save the bowl. Mix the garlic olive oil with a pinch of salt and pepper in the bowl, cover and refrigerate.

Coat the chicken breasts with the mixture and let sit for 1-4 hours. Do not marinate overnight.

Set the grill up to barbeque using the direct method if using a plank, indirect method if not. Prep the plank by warming each side for about 3 minutes.

Place the chicken on the plank and cover the barbeque. The chicken should cook for about 35 minutes, keep a good eye on it, you do not want the chicken overcooked. Turn the chicken every 5-10 minutes.

Brush the garlic olive oil mixture on the chicken breasts the last two times you turn them. Make sure the chicken is done before eating, but not overdone so as to avoid dry chicken.

BBQ Salmon Recipe

BBQ Salmon Recipe, this is a basic recipe that tastes great. I prefer to use a plank for this recipe, but if you do not have one, you can use a piece of tinfoil. You will lose some of the nice smoky flavor, and the fish will cook a bit quicker, but the end result will still be mighty tasty.

Ingredients:
Large Salmon Fillet
2/3 Cup BBQ Sauce (I use Kinders Mild, but you can substitute your favorite)
1/2 tsp Worchester
1 TBSP Montreal Steak Seasoning
Fresh Rosemary Sprigs
Grilling Plank
Salt

Combine the BBQ sauce, Worchester and montreal steak seasoning in a bowl and mix. Marinate the Salmon in this sauce for between 1-4 hours. Do not marinate overnight.

Soak your plank for at least an hour, longer is better. Set your coals up to grill using the indirect method. Remove your plank from the water and rub it with a few teaspoons of salt. Put your plank on the BBQ to heat it. Typically I heat each side for about 2-3 minutes.

Place the salmon on the plank, toss a few fresh rosemary sprigs on top of the fish, and cover the BBQ. It should cook for 25-35 minutes.
